2013 Sauvignon Blanc- Monterey

Bianchi Sauvignon Blanc is a true Sauvignon Blanc drinker’s Sauvignon, one for the aficionado. We have taken our relatively rich stone-fruity San Lucas lot and blended in 21% of the more crisp/grassy/grapefruity Greenfield lot to create a real yummy montage layered in flavors. Vintage 2013 brought us riper grapes than the 2012 with intense ripe flavors as well as decent acid balance. How all the various ripening factors came together for each harvest is indeed unique every year. The relatively high sugar gave us a wine of a percent or so more alcohol making Vintage 2013 rather substantial. We played with several yeasts this vintage to add various layers of flavors. The Delta yeast accentuated the crisp Sauvignon flavors, while the Chardonnay yeast helped out with mouth feel (mannoproteins). In one tank we inoculated with a couple of different yeasts, the early inoculated FrootZen accentuated tropical/stone fruit flavors and viscosity then we finished that ferment with our favorite Sauvignon yeast for varietal characters. Bianchi Sauv Blanc fills a unique position within the line of 4 white wines: crisper and more varietally gooseberry/herbal than the buttery and oaky Chardonnay, less sweet than the way floral/fruity Moscato, and more aggressive than the light/rich/fruity Pinot Grigio.
